Decandent Nutella Truffles




Ahh, the weekend - it's time to indulge a bit! If I'm going to indulge I might as well do it right and the only way to do that is with chocolate. Lots of it. Even better if you add nutella into the equation. So, I decided to make these delicious home-made nutella truffles. They don't really take too long, but taste like you slaved over them for hours. It's a great way to impress family and friends and get on their good side!
If you've never made truffles, you might think that they are hard to make at home. Not at all - it's probably the easiest dessert to make - no cooking and no baking. I made these truffles three ways - fruit and nut, coconut and gingerbread. You can have them plain too, but I always like to add a twist to things.
The fruit and nut nutella truffle is made with raisins and pistachios and reminds me of my favorite candy bar - Cadbury's Fruit and Nut! My mouth is watering just writing about it. The coconut nutella truffles have moist shreds of coconut which go surprisingly well with the hazelnut flavour of nutella. The third truffle contains crushed gingerbread snaps for an unusual flavour. I think ginger (sweetened of course) tastes amazing with chocolate. Have you ever tried candied ginger chocolate? It's to die for!
Ingredients
makes 40-50 truffles
Pantry
350 g baker's dark chocolate
400 g Nutella
1/4 cup chopped unsalted pistachio nuts
1/4 raisins
1/3 cup gingerbread crumbs
1/3 cup sweetened desiccated coconut
Produce/Fridge
1 cup whipping cream
Step 1: Coarsely chop all the baker's chocolate.
Step 2: Put a quarter of the chopped chocolate aside for later. Take the remaining chocolate and place in a large mixing bowl.
Step 3: Heat the whipping cream on medium-low heat in a small pot until it simmers and bubbles. Tip: Keep stirring the cream to ensure it doesn't burn.
Step 4: Pour the hot cream over the chocolate in the mixing bowl and stir well until smooth. Add the nutella and fold in and continue to mix for 4-5 minutes. You will notice the texture change to a whipped consistency.
Step 5: Cool the mixture in the fridge for one hour.
Step 6: In the meanwhile, prep the remaining ingredients.
For the fruit and nut truffle, measure and lay out the raisins and pistachios.
For the gingerbread truffles, pulverize some store-bought gingerbread snaps in a food processor. I used these lovely gingerbread hearts from Sasha Bakery. They are gingery and sweet, but not too sweet.
For the coconut truffle, measure and lay out the desiccated coconut.
Step 7: After the chocolate mixture has cooled for an hour, divide it equally into three bowls.
Fruit and nut truffle: Add all the raisins and half the chopped nuts to one of the bowls and mix well.
Coconut truffle: Add two-thirds of the coconut to the second bowl and mix well.
Gingerbread truffle: Add two thirds of the crumbs to the third bowl and mix well.
Step 8: Cool the three bowls in the fridge for one hour.

Let the melted chocolate cool for two minutes.
Step 10: Take the three bowls out of the fridge and begin assembling the truffles.
Fruit and nut truffle: Take a coin-sized amount of the chocolate mixture and roll it into a small ball. Dip the ball into the melted chocolate and sprinkle the chopped nuts on top. Place the truffles on a lined baking tray.
Coconut truffle: Take a coin-sized amount of the chocolate mixture and roll it into a small ball. Roll the ball in the remaining desiccated coconut to coat well. Place the truffles on a lined baking tray.
Gingerbread truffle: Take a coin-sized amount of the chocolate mixture and roll it into a small ball. Dip the ball into the melted chocolate and sprinkle some gingerbread crumbs on top. Place the truffles on a lined baking tray.
Step 11: Cool the truffles in the fridge for two hours. Serve at room temperature. Dig in!

Flourless Chocolate Cake

What You Will Need
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 1 cup white sugar
  • 1ounce bittersweet chocolate
  • 1 cup butter
  • 6 eggs
How to Make It
Start the process with preheating your oven to 300 degrees F. Then grease a 10-inch pan as you set it aside. Place a small man on a medium high burner and add in a 1/2 cup of water, 1/4 teaspoon of salt and 1 cup of sugar. Allow this mixture to melt and set aside.
Now, using a double boiler, you will want to melt 1 ounce of bittersweet chocolate. When this is done, place it into a mixture. From here, add in a cup of butter into the mixer and beat on low. Once it has been well blended, you will then add in your sugar water mixture.
At this point, you will begin to crack and add in 6 large eggs. This should be done one at a time and wait until the previous egg has been well beaten into the mixture. You will now take the batter and place it into your baking pan. Once filled with the mixture, take this pan and put it in a larger pan that is filled with boiling water that comes up about half way on your cake pan.
Put this bath inside of the over and allow it to cook for 45 minutes. The center of the cake will appear raw still, but it will keep cooking after you have removed it from the oven. Place your cake pan inside of the refrigerator overnight. When you are ready to serve it, take the cake pan and hold it in hot water for 15 seconds, then flip it over and onto a plate. Chocolate has its origins in a bitter, dark beverage that was first enjoyed by the Mayans and Aztecs of Central America, over 3,000 years ago. Later, during the sixteenth century, Columbus introduced cocoa beans to Spain. From then on, a passion for chocolate swept through the noble houses of Europe. Chocolate first reached England in the 1650s, but it remained an expensive luxury for at least another 200 years. Several recent scientific studies have come up with encouraging news for chocoholics. A body of research, for example, suggests that eating a daily portion of chocolate may help maintain a healthy circulation, thanks to the naturally occurring compounds in chocolate called flavanols. Based on these findings, a number of chocolate manufacturers are introducing new production procedures designed to retain the optimum levels of flavanols in their chocolate. Other restaurants have introduced their own spin on the chocolate issue and any chef worth his or her cocoa beans uses only the very best quality chocolate in their signature chocolate-based creations.
So, if you thought that chocolate was wicked and no more than a pure indulgence, think again. Here are some fascinating findings that will have you reaching for chocolate in any shape or form:
• Research published in the highly respected "Journal of the American Medical Association" reveals that chocolate is good for cardiovascular health. In clinical trials subjects who consumed just 25 grams a day of semi-sweet dark chocolate, which is rich in flavanols showed significant reductions in the platelet activity that causes blood components to stick to the blood vessel walls and impede blood flow. A small daily portion of chocolate, however, may help promote normal blood flow and maintain a healthy cardiovascular system as well as reducing the risk of developing blood clots.
• Other studies have revealed that the flavanols found in chocolate may help decrease the oxidation of "bad" cholesterol (LDL, Low Density Lipoproteins). Oxidised LDLs increase the build up of plaque on the lining of blood vessel walls. When this happens blood flow is restricted, which may result in the development of conditions such as high blood pressure, atherosclerosis and other types of heart disease.
• Important European research has also shown that dark chocolate has greater anti-oxidant properties that can protect us from a whole range of life threatening diseases including heart attack and possibly even cancer. But, researchers at the University of Glasgow and at Italy's "Institute for Food and Nutrition Research" concluded that volunteers had to eat twice as much milk chocolate as dark chocolate to obtain the same levels of antioxidants. Further research is ongoing to establish whether dairy products consumed in combination with dark chocolate may actually reduce its antioxidant effects.
In all these various studies, dark chocolate, which is higher in flavanols, appeared to contain greater health-giving properties than milk chocolate.
Ultimately, as with all good things in life, moderation is called for when it comes to chocolate consumption, largely due to its high saturated fat content. But, hey, it can't be all bad! On the contrary; we now know that chocolate, with its reliable feel good factor can also make us fell fit and well.
